Warm weather is here, so I think I will share my Ube Halaya Ice Cream with you. Ube is one of the popular ice cream flavors in the Philippines.

And today, I’m going to share how I make my homemade Ube ice cream at home. I make it at home using ube halaya and liquid ube flavor from McCormick. Try this recipe now; I know you will totally love it! Plus, you don’t need an ice cream maker to do this.

For those who are unfamiliar, Ube is a purple root vegetable that is a staple in Filipino cuisine. I also used Ube for my halaya dessert recipe and an essential ingredient in Filipino dessert recipes, including halo-halo, cakes, cookies, and of course, ice cream.

I don’t have an ice cream machine; I only mix and blend all the ingredients and put the mixture in an airtight container, and froze them in the freezer.

You will need:

  • 2 cups heavy whipping cream (or 1/2 L heavy whipping cream)
  • 150 grams condensed milk
  • 3/4 to 1 tbsp ube flavor
  • 150 grams ube halaya


  1. In a bowl, combine condensed milk, ube halaya, and ube flavor. Set aside.
  2. In a large bowl, pour the heavy whipping cream and beat it using a hand mixer until it begins to thicken then increased the speed until you reach soft stiff peaks form.
  3. Slowly pour the ube-condensed milk mixture into the heavy whipping cream. Fold in to distribute, but make sure not to deflate the cream mixture.
  4. Transfer the mixture to a freezer-safe container and freeze at least 6 hours, overnight preferred.


  • Don’t be tempted to put too much ube halaya as you will end up getting ice cream that tastes too starchy.
  • If you would like deeper purple color, you can add purple food coloring.
