Sourdough Milo Pancakes

For a change, I made pancakes today using my sourdough discard and Olivias favorite – Milo chocolate for our Sunday breakfast.

You will need:

For the overnight pancake batter

  • 250 grams sourdough discard
  • 100 grams Milo powder
  • 100 grams all-purpose flour
  • 2 to 3 tbsp sugar
  • 200 grams buttermilk or milk

For the final pancake batter

  • 50 grams vegetable oil
  • 1 tsp vanilla extract
  • 2 large eggs
  • 2 tbsp milk
  • 1 tsp salt
  • 1 tsp baking powder
  • 1 tsp baking soda

Procedure:

For the overnight pancake batter

  1. Mix well just until combined and no lumps. Cover the bowl with plastic film (poke some holes) and leave it on the countertop for 8 hours or overnight.

For the final pancake batter

  1. Beat oil, vanilla extract, eggs, and milk then add to the sourdough starter mixture plus the salt, baking soda, baking powder. Whisk until combined and smooth.
  2. Heat up a non-stick frying pan and add a little bit of oil or butter or spray with your baking spray. Add the pancake batter to the pan (I used 1/2 cup) and cook for a few minutes until the bubbles start forming. Then flip the pancake and cook for another minute, or until cooked through.
  3. Serve warm. Enjoy!
