Our love for cakes in the house especially chocolate cake is increasing. That’s why my daughter and I made this moist cake for our weekly family lunch get together.

Moist Chocolate Cake with Sourdough Discard and Coconut Topping

You will need:

For the sourdough chocolate cake

  • 3 large eggs, room temperature
  • 1 tsp vanilla extract
  • 325 grams sugar
  • 250 grams sourdough discard, unfed
  • 330 grams all-purpose flour, sifted
  • 3 tbsp cocoa powder, sifted
  • 30 grams milk
  • 225 grams butter, melted and cool until lukewarm

For the coconut topping

  • 50 grams powdered sugar
  • 1 to 2 tbsp cocoa powder
  • 75 grams desiccated coconut
  • 75 grams butter, melted and cool until lukewarm
  • 4 tbsp freshly brewed coffee, lukewarm

Procedure (video):

For the sourdough chocolate cake

  1. Preheat the oven to 190 degrees Celcius (374F) and generously grease a 25-by-19 cm baking pan.
  2. In a small saucepan, melt butter. Set aside until lukewarm.
  3. In a bowl, whisk together eggs and vanilla extract then add sugar until evenly incorporated.
  4. Then add discard, flour, and cocoa powder. Whisk until combined and no dry ingredients remain.
  5. Add milk and lukewarm melted butter. Whisk together to combine.
  6. Pour the mixture into the prepared baking pan and bake for 30 minutes or until an inserted toothpick comes out clean.
  7. Once done, immediately remove the cake from the oven and let it cool completely before spreading the topping or frosting.

For the coconut topping

  1. While the cake is cooling, in a bowl, add all the ingredients and stir until smooth.
  2. Once the cake is ready and cooled, pour and spread the coconut topping. Enjoy!

  1. I tried this but it came out very dense. I was wondering if there are really no baking soda or powder?

     
    • Hi Aimee, sorry to hear that your cake came out dense.
      If you want to try this recipe again, you can add 1 tsp baking powder or soda
      and please don’t overmix or overneat the batter.
